Macro Bowl with Tahini Dressing

When I lived in California, I used to go to the Peninsula Macrobiotic Monday Gourmet Vegan Dinners, which went on every week for more than 20 years.

A frequent culinary enjoyment there was the macro bowl or plate, with some kind of grain, some kind of bean, a variety of veggies, and a yummy dressing.

The possibilities are infinite! Here’s one option.


Ingredients

  • 1 large beet, boiled until tender and peeled
  • 1 cup cooked beans
  • 1 cup cooked rice
  • Handful of leaves from your favorite green plant

Dressing

  • 1/4 cup tahini
  • 1/4 cup olive oil
  • 3 lemons, squeezed
  • 1 Tbsp maple syrup
  • 1 Tbsp garlic powder
  • Salt and pepper to taste

Directions

Mix all the dressing ingredients in a medium bowl and mix well.

Arrange the beets, beans, greens, rice, and dressing on your plate however you like. Nutritious and delicious!
