Vegan Parmesan

I used to buy the super expensive vegan parmesan from Whole Foods as a delicious, zingy topping for our dinners. But now I know how to make it myself with only $2.75 of ingredients! Bonus: it takes less than 5 minutes.

I might not be able to get my Italian grandmother to willingly try it, but then again if I just put it on her plate she might enjoy it!


Ingredients

  • 1 cup raw or roasted cashews (unsalted)
  • 1/4 cup nutritional yeast
  • 1 tsp garlic powder
  • 1 tsp salt (optional)

Directions

Put all the ingredients in your food processor, and blitz it until you get it is finely ground, with the texture of grated cheese.

Sprinkle it liberally on top of your favorite pasta, risotto, salad, or pizza dish.

I like to store vegan parmesan in a sealed container in the freezer for extra freshness. Enjoy!


Inspiration

For today’s inspiration, I am reflecting on the 5 remembrances:

I am of the nature to grow old; there is no way to escape growing old.

I am of the nature to have ill health; there is no way to escape ill health.

I am of the nature to die; there is no way to escape death.

All that is dear to me and everyone I love are of the nature to change; there is no way to escape being separated from them.

My actions are my only true belongings; I cannot escape the consequences of my actions. My actions are the ground upon which I stand.

May these words help us to be grateful for all the gifts we have today. May we be mindful of our actions so that we can spread positivity around us.
