Zucchini with Almonds

This is a quick and delicious side dish or a yummy snack on its own, inspired by an African recipe.

It only takes three ingredients to deliver a party of flavor, plus salt and pepper if you like.

Zucchini is chopped up, cooked in a bit of vegan butter or olive oil, and then sprinkled with crushed, roasted almonds.


Ingredients

  • 1 Tbsp plant-based butter or olive oil
  • 2-3 zucchini, sliced any way you like
  • 1 handful roasted almonds, crushed or ground up in the blender
  • Salt and pepper to taste

Directions

In a frying pan, melt the plant-based butter or olive oil over medium heat.

Add the zucchini and stirfry for 5-10 minutes until they start to soften but haven’t gone completely mushy.

Mix in the crushed roasted almonds, and add salt and pepper to taste.

Enjoy hot from the pan. What a delicious, African-inspired snack or side dish!


Inspiration

Today I am reminded of the work of David Richo.

He says there are five things we cannot change, they’re just givens in life – and learning to accept these things will bring us greater peace and happiness.

The 5 givens are:

1. Everything changes and ends.

2. Things do not always go according to plan.

3. Life is not always fair.

4. Pain is part of life.

5. People are not loving and loyal all the time.

Humans are not perfect, and trying to pretend we can control any of these givens is a recipe for suffering.

May these words bring some ease and comfort to any tricky situations you find yourself in today.

As my daughter likes to say, “The bad news is, everything changes. The good news is, everything changes.” 🙂
